The Holiday Bikini – The Method

We present an easy take on a drink featured on the seasonal menu. Designed as a batch pre-mixed that's bursting with flavours of a festive period, making it excellent for a festive gathering. Reserve the remaining cordial for morning drinks, puddings, or to make another batch of this cocktail.

Bikini

Serves 10 people

For the Clementine Cordial (produces 750ml)

300ml fresh clementine juice
200ml newly squeezed lemon juice
500g fine sugar

To make the Cocktail (produces 850ml, to serve 10)

400ml premium vodka
100ml dry gin
150ml peach liqueur
200ml citrus syrup (from the recipe above)
Whole cranberries, as a garnish
Mandarin essential oil, for finishing

Method

Making the Cordial: Combine the listed components in a pan, bring to a simmer, stirring so the sugar melts. Next, turn off the burner and leave to reach room temperature entirely. Transfer to a sterilised bottle, close it and refrigerate it chilled, where it will keep for up to a month.

To make Batch Mix: Mix the specified spirits and syrup into a large bottle, allow it to infuse for 60 minutes, then strain best through muslin, so it's fully clarified.

To serve: Pour 85ml from the batch mix into your stirring glass filled with ice, and stir lightly for one minute until cold. Pour into a chilled martini glass or equivalent, garnish with some cranberries and finish by giving it a brief mist with the mandarin essence over the drink.
